Many recipes call for the addition of the ingredient jalapeno peppers to other main ingredients. However, few recipes actually focus on using the peppers as the main ingredient. That is what makes this finger food so intriguing to guests. It is easy to heat up a party plus get great comments when serving stuffed jalapeno peppers.
Many vegetable gardeners find themselves with a surplus of jalapeno peppers wondering how they can prepare them for eating. In this recipe use fresh jalapenos from the garden or purchase them from a local produce store. Either way, they are easy to stuff and taste delicious.
Stuffed Jalapeno Peppers Recipe
Ingredients:
12 large jalapeno peppers
5 slices of cooked crumbled bacon
2 packages of dry ranch dressing mix
1 8oz cream cheese softened
1 cup of shredded cheese (cheddar, monetary, or any variety)
Directions:
Lay out cream cheese at room temperature to softened for easier mixing.
Cook the bacon. Allow it to cool and crumble into small piece. Save the bacon grease for later use.
Slice the jalapeno peppers lengthwise. Remove the inside of the peppers including the seeds.This mixture can be thrown out. Only the hulls of the peppers are used.
Soak the peppers in cold water while the remaining ingredients are mixed.
Mix the softened cream cheese with the ranch dressing mix. Add one package of mix at a time and taste. Depending on preference of taste, the recipe may not require both entire packages of ranch dressing mix.
Add the cup of shredded cheese along with the bacon crumbles to the mixture.
Stuff the hull of each pepper (there are now 24 halves) with the cream cheese mixture.
Pour the bacon drippings in an oven safe pan.
Place the peppers in the bacon greased pan.
Cook peppers at 350 degrees for about 15 minutes or until peppers appear softened.
Tips for Stuffed Jalapeno Pepper Success
Jalapeno peppers are hot and can burn skin. Wear gloves when cutting and working with the peppers. Refrain from touching eyes or mouth.
Some peppers will taste hotter than others. The longer that the peppers are allowed to soak in the cold water, the hotter they taste.
Leave stems on jalapeno peppers. Hold by the stem and eat all of the pepper except for the stem top.
Small jalapenos work also. The larger the pepper, the easier it is to cut, remove insides, and stuff.
