Whip up these appealing, finger-licking football appetizers for Superbowl Sunday or any other winter party.
Celebrating the Superbowl has become a tradition that keeps getting more popular with every passing year. Grocery stores are just as crowded on the Saturday before the football game, as they are the day before Thanksgiving. That’s because it just isn’t a Superbowl party without the snacks. The savory treats included here are especially crowd-pleasing and can be put together quickly and easily on Sunday morning.
Chili Cheese Fries
Cheesy, gooey, and dripping with flavor, chili cheese fries are a true man food.
Ingredients
1 bag frozen crinkle fries or other thick cut fries, prepared in oven
12 ounces Velveeta cheese, cubed
3 ounces (1/2 can) sliced green jalapeno peppers, finely chopped
3 tablespoons chili sauce
¼ cup milk
Method
Place all ingredients except fries in the microwave for 1-2 minutes (ovens vary).
Stir cheese mixture until blended.
Pour over prepared fries and enjoy.
Creamy Taco Dip
Soothing and spicy at the same time, this cold dip will be gone before the end of the first quarter. Serve with a big bowl of tortilla chips.
Ingredients
1 can of spicy refried beans
8 ounces low fat sour cream
2 medium tomatoes, diced
2 cups of shredded lettuce
2 ½ ounce can sliced black olives
2 tablespoons roughly chopped fresh cilantro
1 cup of mild, medium, or hot salsa to taste
2 to 4 tablespoons taco seasoning
1 cup of shredded Monterey Jack cheese
Method
Mix sour cream with taco seasoning in a bowl until well blended.
In a clear 9-inch pie plate, spread a layer of refried beans.
Add a layer of sour cream mixture.
Layer with lettuce, followed by tomatoes and olives.
Sprinkle the top with salsa and cheese.
Garnish with cilantro.
Chill in the refrigerator before serving.
Meatball Enchiladas
These enchiladas are a hearty and delicious take on the classic meatball sub, only gooier!
Ingredients
2 lbs lean ground beef
1-10 ounce can of enchilada sauce, divided
8 ounces shredded Monterey Jack cheese
1 cup crumbled day-old corn bread
½ teaspoon salt
1-10 ½ ounce package 6-inch flour tortillas
Method
Preheat oven to 350 degrees Fahrenheit.
Combine cornbread, beef, half the enchilada sauce, and salt in a bowl until well mixed.
Shape beef mixture into meatballs approximately 1 inch in diameter.
Place on a greased cookie sheet and bake for 30 minutes.
Increase the oven temperature to 375 degrees Fahrenheit.
Place a tablespoon or two of sauce and the same amount of shredded cheese onto each flour tortilla.
Place three or four meatballs into the tortillas and roll them up.
Put the enchiladas seam side down into a greased baking dish.
Pour the remaining enchilada sauce and sprinkle the remaining cheese onto the enchiladas.
Bake 15 to 20 minutes, or until hot and bubbly.
These can be served whole as a meal or sliced for snacking with toothpicks.
