Twice Baked Potatoes always pleasantly surprise dinner party guests. Here is a recipe that yields eight serving portions of Insanely Good Twice Baked Potatoes.

When it comes to finding the perfect side dish for a meat based dinner, look no further than the twice baked potato. Rich and creamy with flavor of melted cheese, bacon and chives, but still hearty enough to stand up and compliment a piece of red meat, pork or chicken. Here is a twice baked potato recipe that will leave the guests clamoring for more. And the best part is, the preparation is a lot easier than the name makes it sound.

Insanely Good Twice Baked Potatoes

Things You’ll Need

  • 4 large Russet baking potatoes
  • 1 8oz package of shredded cheddar cheese or other cheese of choice
  • 2 tablespoons butter
  • 1 large shallot
  • 2 cups of milk
  • 4 slices pf cooked bacon, crumbled
  • Sour Cream
  • Chive fresh or dried chopped
  • Salt and pepper to taste

Baking the Potatoes

  1. Preheat oven to 450 degrees.
  2. Wash the potatoes under a running faucet and remove any eyes that might have sprouted during storage.
  3. Pierce potato skin all around potato utilizing a fork or sharp knife.
  4. Place the potatoes on a baking sheet and slide into the oven.
  5. Bake the potatoes for 15 minutes at 450 degrees.
  6. Reduce the oven temperature to 350 degrees and continue to bake for 45 to 60 minutes.
  7. Remove the potatoes from the oven and test to see if they are done. To perform the test, simply slide a knife into the skin of the potato. If the knife goes in without resistance, then the baking is completed, if not, place in the oven in 10 minute increments until the knife slides in easily.

Making the Filling

  1. Dice shallots finely.
  2. Place the shallots and small amount of butter in a sauce pan and sauté until the shallots are translucent.
  3. Slice the baked potatoes in half and scoop out the filling into a bowl.
  4. Add the sautéed shallots and milk, half of the cheese cheese, additional butter, salt and pepper and half of the bacon into the bowl and stir until well mixed.
  5. Scoop the mixture back into potato shells that were created and set on the baking sheet.
  6. Sprinkle additional cheese and the remainder of the bacon onto the potatoes.
  7. Bake the potatoes for a second time at 350 degrees for about 8 to 10 minutes until the potatoes are warmed through.
  8. Serve to the guests hot with a scoop of sour cream and some fresh chive.

High Class Twice Baked Potatoes

Tailor the twice baked potatoes to the gathering at hand. For a high end alternative use the Italian meat pancetta in lieu of bacon. Add a small spoonful of caviar atop the sour cream and serve along side filet mignon.
