These gluten free meatballs with rice in them are simmered in a rich tomato sauce. They feature a slightly spicy note and a complex flavor.

Ingredients for Gluten Free Porcupine Meatballs

  • 3 lbs. ground beef
  • 1 1/2 c. uncooked rice (not minute or quick cook rice)
  • 3/4 c. chopped onion
  • 3 cloves minced garlic
  • 1 Tbs. salt
  • 1 tsp ground cinnamon
  • 3/4 tsp pepper
  • 2- 8oz. cans tomato sauce
  • 2 c. water

Preparation for Gluten Free Porcupine Meatballs

  1. In a large bowl, combine beef, rice, onion, garlic, cinnamon, salt and pepper.
  2. Roll into 1 to 1 1/2 inch balls.
  3. In a large skillet, brown Gluten Free Porcupine Meatballs, turning frequently.

Skillet Cooking Method for Gluten Free Porcupine Meatballs

  1. Add water and tomato sauce to the skillet.
  2. Cover and simmer 45 minutes.
  3. Uncover and let rest 10 minutes. Sauce will thicken slightly.

Baking Instructions for Gluten Free Porcupine Meatballs

  1. Preheat oven to 400 degrees.
  2. Place browned Gluten Free Porcupine Meatballs in a large baking dish.
  3. Pour tomato sauce and water over meatballs.
  4. Cover tightly.
  5. Bake for 45 minutes to one hour.
  6. Remove from oven, uncover and let rest for 10 minutes. Sauce will thicken slightly.

Crock Pot Preparation for Gluten Free Porcupine Meatballs

  1. Place browned Gluten Free Porcupine Meatballs in crock pot.
  2. Cover with tomato sauce and water.
  3. Cook 2-3 hours on high, 8-10 hours on low.

Recipe makes 36-48 gluten free meatballs.

Gluten Free Porcupine Meatballs can be frozen after browning and stored for up to three months in an air tight container. Place frozen meatballs in a crock pot and cook for 4-6 hours on high, 10-12 hours on low.

These sound delicious! I'm living on my own right now, and a few these would be a great addition to a bowl of gluten free pasta. I was wondering if these freeze well, since that would make my life even easier.
