Everyday recipes can be turned into spooky fun by changing just a few things. For even more fun, add in some delicious snacks or desserts. Round out your meals with imaginative creations: brussels sprouts become "gorilla tonsils" and baked pastry can become breadstick bones.
Tuna Spook Sandwiches
Ingredients
2 packages or cans of white tuna, packed in water
3 tablespoons mayonnaise
1 tsp. mustard
Salt and pepper to taste
20 slices bread, crust removed
Whipped cream cheese
Black olive slices for garnish
Directions:
Mix the tuna, mayonnaise, mustard and seasonings together in a bowl.
Using cookie cutters, cut out ghosts, bats or pumpkins, in pairs, out of the bread.
Spread 10 slices with tuna mixture and cover with the matching cut-out slice of bread.
Spread the top of each "spook" with cream cheese. Use 2 slices of olives to make eyes on each.
Gnarled Witches Fingers
Ingredients
4 Boneless chicken breasts
1 cup flour
1 egg beaten
1 c bread crumbs
Black olives cut in half, lengthwise
Lettuce as garnish
Directions:
Preheat oven to 400 degrees F.
Lightly grease cookie sheet.
Carefully cut chicken breasts part way to create five fingers, leaving part attached. The uncut part will be the “palm” of the hand.
Dip in flour, beaten egg and then bread crumbs.
Broil 5-7 minutes on each side till golden brown and cooked through.
Trim the finger tips with the halved black olives and serve on lettuce
Barbeque Bat Wings
Easy glazed chicken wings become a ghoulish snack
Ingredients
½ cup grape jelly (any kind)
½ cup hoisin sauce (found in any grocery store international or oriental section)
2 Tablespoons soy sauce
1 Tablespoon apple cider vinegar
3 pounds chicken wings (a dozen or so)
Black food coloring
Preheat the oven to 425 degrees F.
In small pot, stir together jelly, hoisin and soy sauce and vinegar.
Simmer and reduce for 5-7 minutes until slightly thickened.
Turn off heat and add in 15 drops black liquid food coloring. This should yield about ¾ cup glaze, reserve ¼ cup and use the rest to coat wings in large bowl.
Arrange coated wings on foil lined jellyroll pan or cookie sheet and bake for 25 minutes. Remove and brush with remaining glaze and return to oven, baking until no longer pink near bone about 5 more minutes.
Serve on platter with wings arranged together to form a bat shape.
Cat Litter Casserole
Kitty litter takes on a whole new form with this simple and fun entrée idea. This dish is even more decorative served with a new, clean cat pan scoop.
Ingredients:
Cooked rice, any kind.
1 pound ground beef, turkey, or sausage. Whatever you prefer.
1 cup biscuit baking mix (like Bisquick)
1 cup shredded cheddar cheese
½ tsp salt and pepper
Preheat oven to 350 degrees F.
Mix together biscuit mix, ground meat and cheese, form into tootsie roll size and shaped “dumps.”
Bake 20 minutes on cookie sheet, remove when cooked thoroughly.
Meanwhile, prepare rice according to direction. Spoon rice into a cake pan and lay toss “dumps” throughout the rice “litter.”
