When planning a spring party menu, consider simple recipes that are easy to make, that can withstand changing temperatures and that use seasonal ingredients.

One of the biggest hurdles of planning any party is deciding what food to serve. Fortunately, a celebration held in the spring lends itself to certain kinds of meals. Since the warmer weather encourages outdoor entertaining, a simple meal of salads and desserts that does not require heating works well. Also, since so many foods come into season at this time, it makes sense to include recipes that take advantage of those tastes and flavors.

Include Salads on Your Spring Party Menu

Salads are easy, transition well from refrigerator to table and incorporate different flavors into a single recipe.

  • Chicken salad is always a good choice. Make it easy to hold by spooning salad into cupped bibb lettuce leaves.
  • Fruit salad, served in individual glasses, is simple and fresh.
  • Broccoli is fresh in the spring and plays a starring role in a tangy, yet sweet salad recipe.

Broccoli Salad

Ingredients

  • 1 head broccoli
  • 1 jar real bacon pieces
  • 1 small red onion, chopped
  • 2 cups shredded sharp cheddar cheese
  • 1 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • ¼ cup sugar
  • Salt and pepper to taste

Directions

  1. Wash the broccoli head. Cut the head into flowerets and the stem into small pieces. Put into a large bowl.
  2. Mix in the bacon pieces, onion and cheese.
  3. In a small ball, combine mayonnaise, red wine vinegar, sugar and salt and pepper.
  4. Toss with broccoli.

Easy Desserts for a Spring Party

Desserts are often the easiest part of party menu planning. There are tons of tempting options and most are easy to serve and eat. For a spring party, keep rich desserts off the menu. Instead opt for lighter fare and lots of fruit.

  • Making a strawberry tart could not be more simple. It requires only three ingredients.
  • The peak season for pineapples starts in March. Consider an old-fashioned pineapple upside-down cake to end the party.
  • Cupcakes are always pretty and tasty. Plus, their size makes them just right for a party dessert. Top these light and fruity cakes with a favorite frosting flavor.

Jello Cupcakes

Ingredients

  • 1 yellow cake mix
  • 1 package strawberry jello (or flavor of your choice)
  • 2/3 cup corn oil
  • 2/3 cup water
  • 4 eggs

Directions

  1. Combine all ingredients in mixer and beat well.
  2. Pour into 12 cup muffin tin lined with paper liners.
  3. Bake at 325 for 30 minutes or until done.
  4. Frost cool cupcakes.

Salads and desserts make a simple, tasteful and elegant meal for a spring party. Choose recipes that include in-season produce and that are easy to eat.
