Salsa is easy to make and customizable. It can include various ingredients, and be easily altered to fit the desired level of spice.

This recipe is for a tomato salsa that is somewhat sweet, and it goes well with any tortilla chips. Also included are some variations and alternate uses of the salsa.

Ingredients

  • 4 large tomatoes
  • 1 onion
  • 1 cup orange Fanta soda
  • 1/8 cup cilantro leaves
  • 1/2 clove garlic
  • 1/2 of a large green pepper
  • 1/4 of a navel orange
  • 1/2 teaspoon chili powder
  • 1 jalapeno pepper (for spicy salsa- optional)
  • 1 habanero pepper (for a very, very spicy salsa-optional)
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1/2 lb shrimp (optional, but very good in this salsa)

Directions

  1. Dice the tomatoes
  2. Mince about 1 cup of onion
  3. If hot peppers are used, mince the jalapeno and/ or habanero pepper. The entire pepper does not have to be used, and using the entire habanero will make the salsa very spicy indeed
  4. Mince the orange (about 1/4 cup worth of it)
  5. Chop the green pepper into pieces about 1/4 inch wide
  6. Mince the clove of garlic
  7. Finely chop cilantro leaves
  8. If used, cut shrimp into bite-sized (or smaller) pieces. Put everything from steps 1-8 together in a large bowl, and set aside.
  9. Mix Fanta, chili powder, lime juice, and salt and pepper together in a bowl. Pour this mixture into the bowl of the ingredients from steps 1-8.
  10. Stir everything together in the large bowl. Take a ladle, and scoop about one cup of the mixture of everything (the chopped and diced ingredients, combined with the Fanta mix) and set in food processor or blender. Blend until a somewhat smooth, soupy textured concoction is created
  11. Pour the blend from the food processor into the large bowl again, and stir everything together again. The salsa is now done!

This salsa is great with any tortilla chips, but it also has other uses. It is delicious when served over grilled fish, or with rice and beans. It also works to supplement burritos, tacos, quesadillas, and enchiladas, and may be mixed with melted cheese to make a sweet, spicy, and chunky nacho cheese dip. If you do not want the salsa sweet, leave out the Fanta and orange. If you want the salsa even sweeter, put a little minced mango in it. This salsa recipe produces a chunky salsa (with chunks of tomatoes, and pieces of onions, and green and hot pepper). If you find this too chunky, blend more or all of the mix created after step 9 for a smoother, creamy salsa. The salsa created by the original recipe may also be mixed with mashed or pureed black beans, and used as a filling for burritos, or as a flavorful black bean dip. Although this salsa recipe has many ingredients, making it is simple and inexpensive, and it may be altered to fit your taste.
