Take an avocado, mash it up, mix in just the right combination of fresh, tasty ingredients and enjoy the flavor of perfectly balanced guacamole.

What's the secret to making great guacamole? Use only the best Hass avocados, along with fresh, ripe ingredients and follow these fail-proof guacamole recipes to find out.

Five-Star Guacamole

Ingredients:

  • 4 medium Hass avocados, peeled and pitted
  • 1/2 tsp minced garlic
  • 1 tsp minced jalapeno pepper
  • 1 small tomato, chopped
  • 2 Tbsp white or yellow onion, chopped
  • 1/8 cup fresh lime juice
  • Salt to taste

Directions:

  1. Mash the avocados, garlic and jalapeno together to form a chunky consistency.
  2. Add tomato and onion and stir to combine.
  3. Season with salt to taste.
  4. Squeeze in lime juice and stir.

Serve this guacamole immediately to prevent browning or cover tightly with plastic wrap and refrigerate for up to one hour before serving.

Hot & Spicy Guacamole

Ingredients:

  • 4 medium Hass avocados, peeled and pitted
  • 2 Serrano chiles, seeded and finely chopped
  • 1/4 cup cilantro, finely chopped
  • 1/8 cup white onion, finely chopped
  • 1 small tomato, chopped
  • Kosher salt

Directions:

  1. Grind the onion, cilantro and serrano chiles into a paste using a mortar and pestle or molcajete.
  2. Season the paste with salt.
  3. Mash the avocados into the paste until well blended.
  4. Add the chopped tomato and stir.

Serve immediately to prevent browning, as there is no lime juice in this recipe. For even hotter guacamole increase the amount of Serrano chiles to four.

Charred Corn Guacamole

Ingredients:

  • 1 ear fresh corn, cleaned and washed free of silk
  • 1 Tbsp butter
  • 4 Hass avocados
  • 1 Tbsp fresh cilantro, chopped
  • 1 small tomato, chopped
  • 1 jalapeno, seeded and finely chopped
  • 1/8 cup white onion, finely chopped
  • Dash of hot sauce
  • Kosher salt to taste
  • Fresh lime juice to taste

Directions:

  1. Butter the ear of corn and place on a hot grill for 12-15 minutes until corn is charred.
  2. Slice the charred kernels off of the corn cob and set aside to cool.
  3. In a bowl, mash the avocados until they are a chunky consistency.
  4. Add the charred corn, cilantro, tomato, jalapeno, and onion.
  5. Sprinkle with a dash of hot sauce and stir all ingredients together just until blended.
  6. Season with kosher salt and lime juice to taste.

All of these recipes will make approximately 4 cups of guacamole. To reduce the amount to 2 cups, just cut the ingredient amounts by half.

Two other great recipes to try are Charred Tomatillo Guacamole and Mango Guacamole

A couple of things to keep in mind when making guacamole are to never add mayonnaise, cream cheese or sour cream to a guacamole recipe, and to not blend the avocados until smooth. Guacamole should be a chunky consistency.

Serve guacamole with crispy tortilla chips or warm corn tortillas in a festive bowl or an authentic molcajete for a more traditional presentation.
